Berry Mousse with Strawberries, Blackcurrants, or Other Berries
This mousse can be made from fruits or berries. Apples whip up the best, while berries may require a bit longer to whip.
Mousse made from blackcurrants turns out especially well. I’ve also made it with strawberries, cherries, pears, and mangoes. However, I don’t recommend using sea buckthorn – it’s too fragrant. It’s better to make the mousse with apples and add sea buckthorn at the end.
Berry Mousse Recipe
- Berry or fruit puree – 250 g (I used strawberries)
- Gelatin – 10 g
- Water – 20 ml
- Vanilla – to taste
- Sweetener – to taste
First, you need to prepare the puree. Clean the fruits from the core and peel, and remove leaves and stems from the berries. Cut them into pieces and blend until smooth. Then strain through a sieve to remove large seeds and fibers.
I don’t recommend making mousse from pineapple. It doesn’t whip well and doesn’t taste good. If you still want to try pineapple, you need to boil it for 3-4 minutes first.
Meanwhile, pour cold water over the gelatin and let it swell.
Add 3 tablespoons of puree to the gelatin and heat until the gelatin dissolves. Pour the gelatin mixture into the remaining puree and beat with a mixer on maximum speed for 25 minutes. The appearance of the puree won’t change for the first 10 minutes. It will start to increase in volume and become mousse-like after 15 minutes of beating. This is normal – don’t worry.
If the mousse is prepared as a separate dessert, it should be poured into molds and refrigerated for a couple of hours.
This dessert is very low in calories, making it ideal for weight loss and proper nutrition.
